hehehe. good point. i should have mentioned that we do not bring meat into our house. kyle is vegetarian and i just can't deal. ;)

It might have gone bad. Now, there are wines that have an essence of bacon fat in the mouth - most notably, Petite Sirah. In such cases, it's a feature, not a flaw. But generally speaking, one wouldn't find the taste of prosciutto to be desirable. I wouldn't anyway.
Here's the scary part. Get another bottle. If it tastes the same, it was supposed to taste like that. If the second bottle tastes different, the first was probably bad.
Estimates in the industry of bad bottles due to faulty corks is anywhere from 1% to 5% - it's not that unusual to get a bad bottle.

Indeed it can go bad. It can age (reds, anyway) a long time under ideal storage conditions but not so much under less-than-ideal. Cork closures can be faulty, too - most commonly by containing a compound that affects the flavor of the wine to make it taste like (variously) wet cardboard or a musty basement. Or dirty sweat socks.
Aging doesn't always make wines better, though it can. Generally, it makes them different - whether the difference is better or not depends on the wine. And the wine drinker.
BTW, we had some lovely Bulgarian wines when we were visiting there. There's a long tradition of wine growing and the industry is coming back with some credible wines. Definitely worth trying.
I thought aging and going bad are two names of the same process... only we indicate we like the results in the first case.
Well, aging in the presence of TCA or too much oxygen or too much light or too much heat or temperature variation isn't good. Other than that, it depends on one's individual taste as to whether it's better or just different.

OK, this conversation is getting REALLY interesting. Here's a question for you: how does one LEARN about wine? People here keep talking about how the wine industry has really picked up and is on the rise and how there are some really good wines available for very reasonable prices... Both Kyle and I love wine and we have a glass with dinner almost every night. But neither of us really knows how to go about developing our taste... Any advice? It'd be greatly appreciated.
How to learn about wine? Drink it. The trick is to remember what you drink - who made it? what grapes is it made from? where was it made? Once you start to do that, you will start to see patterns of things you like and don't.
My father taught me that the best way to learn about wines is to drink two together (in separate glasses, silly...). Our memory remembers differences in flavor more easily than absolute flavors. And again, remember (or make note) of what you tasted.
Also, our palettes change as we age and, typically, we develop more of a taste for savory flavors and less of a taste for sweetness. Dry wines (actually, just less residual sugar) match most foods better than sweet wines. Look for combinations that suit your own palette - there are no right or wrong answers.
More on that... And much of this is my own preference - YMMV.
Intensely flavored wines typically match intensely flavored foods. Red wines (Bulgaria makes some good ones) will go well with grilled foods. Foods with sweetness need wines with a little sweetness because the food will make dry wines more astringent.
Try a couple of experiments:
1. Try two different wines made form the same grape (e.g. Cabernet Sauvignon) from the same country but different producers. Note the similarities (you'll be tasting the grape and the area) and the differences (due to the winemaker).
2. Try two wines from different grapes from the same producer. You'll taste the difference in the grapes.
3. Try two wines from the same grape but different countries - you'll get the stylistic differences but, again, will taste a common element that's the flavor of the grape.
It's all about systematizing in your own mind what you're tasting and remembering as much of it as you can so that you can make educated guesses.
BTW, we found a nice wine list at a restaurant in Sofia near Doctor's Park in the old Aeroflot building. It was called "New [something]" - but I can't recall what the [something] was right now.
